Chili crisp is a versatile Chinese condiment featuring crispy chili flakes, garlic, shallots, and spices suspended in oil. The most famous brand, Lao Gan Ma, sparked a global trend, but homemade versions offer customizable heat and flavor.


If you prefer to make your own, slowly fry chili flakes, garlic, shallots, and optional Sichuan peppercorns in neutral oil until crispy, then add seasonings like sugar, MSG, and salt. The result should have textural contrast with crunchy bits throughout. Store in an airtight jar at room temperature for up to three months.
