Spicy potato, tomato and nigella seed aloo dum on carrot pilau rice with cumin, coriander and timur peppered pork belly and a black-eyed bean and jimbu chive dal. 


Rosdip is Nepali-born, a digital portfolio manager. Sixteen years after moving to the UK, he lives in North Shields. His father served as a Gurkha in the British Army. 


Rosdip: "I feel like there isn't a lot of visibility around Nepalese food, so I'm really excited to show my heritage to the judges." 


Rosdip: "The signature dish I'm making is aloo dum from my hometown, Taran in Nepal. Spicy aloo dum that my mom used to cook all the time, which is potato with cumin, nigella seeds, and pork belly with cumin and coriander. Then I'm making dal where I will be adding the Himalayan chives, jimbu." 


Anna: "That pork laden with all of its own spices. It needs to be soft and yielding. It can't be overdone." 


Grace: "I always thought dal was lentil based. This is black-eyed beans."

Grace: "The aloo dum, the nigella seed, the tomato and the garlic mellow really well together when you eat them, and it is a really unique dal. I can absolutely taste the jimbu in that. This is excellent." 


Anna: "I love the use of timur in the pork belly. It just gives it this sweet, fizzing liveliness. You've browned it beautifully, but there is still a stickiness about it. I love that you're bringing Nepalese food into this kitchen."
