Amaretto Sour Cocktail Cake

Scott's cocktail-inspired bake, drawing on the amaretto sour he and his wife used to serve at the dinner parties they hosted before having a child. Vertical layer cake of amaretto sponge wrapped around white chocolate amaretto Swiss buttercream, with cherry crumbles through the layers and toasted almond flakes on the exterior. Scott is a New Yorker who joked he practiced his bakes in Central Park: 'I dug a ditch. I set a fire, dragged a stove out there, the rats all pulled up benches.'
Inside reveal earned 'Wow. Beautiful. Look at that. That's what we wanted.' Some critique on consistency: 'Some of your sponges are all right. There's a couple of them that a little bit deflated.' On the flavor: 'I love the little burst of flavor you get with the cherries. That's a very good idea.' Final read: 'That looks very good.'
