Cirilo describes: 'Kidney beans. I chop a lot of onions, garlic, pepper, and a little bit of passata to create a little bit of a soup going. So we're gonna have a little bit of a white rice. Also we're doing a little bit of a steak. And what I'm doing is I'm creating my own version of a plate that we call in Panama arroz poroto y carne. That means rice, beans and meat. Really humble ingredients, but really good flavors coming out of it.' He enthusiastically explains Panamanian cuisine: 'When we built the Panama Canal, we have people from everywhere on the world. So the merge of all these cultures together give us, like a special flavor that comes from there. I love it like crazy. You won't imagine, mate.' When discussing his beans with Gregg, Cirilo responds: 'Dancing is something that we love in Latin America, so I wouldn't mind, honestly. I'll join you if you want.'

Gregg: 'Steak is cooked well, but your sauce started to burn. You made another one. There's a little bit of sweetness in there, little bit of smokiness in there. I'm just getting it. But those beans are your favorite ingredient. It's there that we're going to get the flavors of Panama, but it's not quite delivering.' John: 'Rice lovely and free flowing. But the main flavor is actually coming from that slaw that's quite vibrant and quite sharp. That's where the big banger is.' Gregg: 'Your beans are stepping up and they're shaking my hand, but I wanted to dance with them.'
