**Beer-Battered Spotted Bass Taco with Avocado Mousse, Cabbage Slaw, Chipotle Remoulade and Fresh Corn Tortilla** 


Jonathan called serving a taco on Top Chef a ballsy move and committed to executing the simple form perfectly. He pressed fresh masa tortillas on a flat top, fried the bass in a light beer batter (using 500 g beer to 400 g cake flour for a delicate crust), and built each taco with avocado mousse, a cabbage slaw and a chipotle remoulade. 


{Jonathan}: "When you make something simple, it's got to be the best version of it. I'm going to focus on a beer-battered bass fish taco - now that Brandon's not here, I feel like I'm in the limelight."
