Chef Amanda (preparing to judges): "I made a black garlic pappardelle with a cumin lamb ragu. On the very top is an XO sauce. There's also some celery leaf and crispy shrimp chips."
Judging
"The texture. It's snappy."
"I suspect that you make the pasta dough, it hydrates overnight, and then when you roll it out, you add too much flour, and that flour doesn't hydrate, and it just gets dry."
"The lamb ragu is flavorful."
"I love the celery. I really do taste it. But I don't necessarily know if there was something new there. Something chaotic?"
"No, that was just a nice pasta dish. Just a nice dish."
