Tangyuan with Chrysanthemum Tea & Black Sesame Filling Cara's 'good' dessert in the Garden of Good and Evil challenge — a Chinese New Year's dumpling.
Cara: "Right now, I'm weighing out black sesame paste. I'm going to fill these dumplings with them. My good dessert is a Chinese mochi soup dumpling. Still a dessert, but it's something that's, like, good for you."
On presentation Cara explained: "My good dessert is tangyuan. It's made with chrysanthemum tea, and it's rice mochi filled with black sesame, which is this typical New Year's dumpling."
Wylie Dufresne: "I love the dumpling. I love that filling and the way it meets with the mochi. I think it's delicious. Just for me, could be ever so slightly sweeter."
Michael Cimarusti: "It's really refreshing, and I think it tells a wonderful story for me."
Padma Lakshmi: "Our dumplings were really nice, but the filling is sort of gritty, dense black sesame. So I think to break up that denseness, maybe just a little sweeter inside."
Michael Cimarusti (overall on Cara): "These two desserts kind of are the two sides of Cara. She's got clearly a mastery of Chinese cuisine, but then here, she proves that she's got very rigorous French training somewhere in her background."
