Blackcurrant Compote with Brioche Ice Cream

Jack: "I'm making a Kir Royale but with no alcohol. Taking all those flavours and putting them all together." Jack: "Compote at the bottom. A brioche ice cream and then covered in blackcurrant wood oil and blackcurrant powder as well." He mixes a brioche ice cream base. He creates a fruit compote by cooking blackberries and blackcurrants with lemon and sugar. Jack: "That is going to be the element that's going to cut through everything and be really tight." He carefully places fresh blackberries on top of his compote, drizzles blackcurrant wood oil over the top, and finishes with a quenelle of brioche ice cream.
Lisa tasted the pre-desserts blind and ranked Jack's dish second out of three. Lisa: "I feel like it needs to be a little bit more zing in it." Lisa: "Yeah, it's quite rich, isn't it?" The dish was praised for its fruity base but Lisa felt it was one-toned. Lisa: "Number two, it's got all these lovely bouncing flavours, but it's one tone."
FINALS JUDGING -- Changes: Made more refreshing (Lisa's feedback). Added splash of vinegar to compote. Added lemon zest and sugar. Finished with soba cha (Japanese buckwheat tea).
Tom: "It's clean, it's acidic, it's sweet. My only thing is the brioche ice cream that I was really looking forward to. It's just kind of cold and creamy. I can't really taste any brioche, actually."
Phil: "I really like that brioche ice cream, and I've never tasted anything quite like it. It's really subtle, that brioche flavour, but it gives a plainer base for all the other bigger flavours to sit on top of."
Lorna: "Big flavours in those berries, and then cut through by the creaminess of the ice cream."
RESULT: Unanimous win for Jack's pre-dessert.
