Brain Ube Meringue Bombs

Brain-Shaped Ube Meringue Bombs with Banana Bread, Ube Halaya, Banana Caramel and Ube Diplomat Cream, finished with Strawberry Coulis
Meeki, a brain tumour researcher, leaned into his day job by shaping his bombs as anatomical brains and finishing them with a strawberry coulis designed to look like blood. His ambition, in his own words, was to send a chill down the judges' spines. The interior layered banana bread (with a splash of rum and soft dried banana for punch), then ube halaya, then banana caramel, then ube diplomat cream.
Meeki worried throughout the bake about getting every component finished on time and about the meringues not sitting flat in the brain moulds. He flagged that he never keeps things simple.
No Hollywood handshake was awarded. Star Baker and elimination for the week are decided after the Showstopper, which is not included here.
Paul thought Meeki had successfully achieved the brain look and said it looked pretty good. Prue exclaimed that it was amazingly colourful, and said it was really delicious, noting she is not normally keen on banana bread but liked his (helped, he said, by a touch of rum).
Paul agreed the ube was nice but called out the banana caramel as delicious, and said the meringue had baked pavlova-like in texture because it had collapsed slightly, with a nice light eat.
