Meeki Lad is a self-taught baker from San Francisco who, away from the tent, works as a brain-tumor researcher at UCSF. He built an online following for his ambitious entremet cakes and became briefly internet-famous when a thirty-layer chai cake collapsed on camera — a moment that captured both his outsized ambition and the high-wire risk of his style. On The Great American Baking Show he is one of eight amateurs competing under Paul Hollywood and Prue Leith for the title of America’s best amateur baker. Meeki bakes from a place of experimentation, favouring bold and sometimes unexpected flavour pairings. After a difficult opening week, this macaron bake marked a decisive turnaround — his own words on hearing the judges’ verdict were that it “hugely validated” his approach and reassured him that, even when his experimental combinations miss, some will genuinely resonate.
