Bramble and Crowdy Cheese Mousse with Oat Crumble and Smoke. 


Hannah: "It's got brambles. It's got crowdy cheese from Scotland." Hannah: "And then it's got some compote. And then it has an oat crumble, and then I've got a smoke. So basically a play on fire and ice." Hannah: "Using the crowdy cheese has just got a little bit more of a curly texture." Hannah freezes her bramble, lemon and thyme granita. Hannah: "There's a toasted oat crumble one in the oven." Hannah: "Brambles. My favourite ingredients to use in desserts and pre-desserts." The completed dish is housed in a smoke-filled cloche.

VETERAN ROUND: Adam: "Smoke's not too offensive." Then after tasting further: "Maybe I'll take that back. That's quite smoky now." Narrator: "Quite a lot of oats." Orry: "Maybe go slightly less crumb." Hannah: "I just thought that." Jun: "I like it. It's herbal as well as it's sweet." Adam ranked this pre-dessert 3rd (last). Adam: "I actually think this might be my least favourite. A wee bit too much oak, a little bit too much smoke." Hannah was eliminated before the judging round and did not present this dish to the judges.
