Gareth's dessert tribute to his fiancee's family, inspired by the classic cocktail. A layer of milk chocolate cremeux is set beneath a layer of dulce de leche cremeux, their contrasting bitterness and salted caramel sweetness stacked together. Topped with a brandy snap biscuit, brandy-poached pears and finished with a ginger and brandy sauce built from the pear poaching liquid, fresh ginger juice and generous amounts of brandy. Bold, rich and unapologetically punchy, designed to leave a lasting impression as the final course of the competition.
