Dulce de Leche
Dulce de leche is a thick, spreadable caramel made by slowly heating sweetened milk until the sugars caramelise and the liquid reduces to a deep, glossy paste. In Latin American cooking it is used as a filling, spread or sauce. The simplest home method is to submerge an unopened can of sweetened condensed milk in a pot of boiling water for two to three hours, though this requires the can to remain fully submerged throughout. The result is a rich, butterscotch-sweet caramel with a salty edge that contrasts beautifully with bitter chocolate or coffee elements in a composed dessert.
