Kirsty's quarter-final dessert: a rich brandy chocolate mousse on a biscuit base with salted pistachios and a raspberry coulis. The recipe is from her Nana Jean, whose 'wicked' chocolate mousse Kirsty managed to get hold of. The biscuit base is smashed biscuit through melted butter - the judges call it an excellent idea because texture is key with a chocolate mousse.

Tony Rodd: technically very well executed; the mousse is nice and light and airy, the biscuit is really good and crunchy. 


Simon Wood: he is not getting the brandy through, but he isn't missing it because the coulis is fantastic. 


John: loves the biscuit base, loves the chocolate mousse, the pistachio is a great element. 


Anna: as a dessert, that is just a plate of happiness. Kirsty is cook of the day and goes through to the quarter-final.
