Laurence during prep: 'I'm making a trail mix. So I'm doing a brassica salad, and I got some apricots, some chocolate cherries. I'm thinking about outdoors. I'm thinking about being woodsy and stuff like that. I think this is kind of on theme with all that.' He described the pomegranate glass: 'The pomegranate glass looks really nice - still a bit soft, but I think as it cools down from the dehydrator it's going to crisp up really nice.' 


At presentation: 'I have for you today a brassica salad with trail mix and a creamy sesame dressing. Oh yeah, that's a pomegranate glass - pomegranate molasses, some glucose. I dehydrated that into a sheet.' Earlier a fellow chef observed: 'Sherry, is this the best vinaigrette ever?' Sherry replied: 'No, I think mine is better.' 

BOTTOM 3. Tom: 'I think that Lawrence's salad, it's a little overdressed, in my opinion. I like the flavour of Lawrence's pomegranate glass, but, like, it made no sense in the context of the salad. And it also gets stuck in your teeth.' Tom: 'This just feels like Lawrence went to the salad bar, took too many ingredients, put it in his pack, and then it got a little wet when he was out there rafting.' Tom: 'You know what Lawrence's dish really needs? A dehydrator.' Gail: 'I mean, I think you embraced the dehydration. The salad itself, it was quite overdressed.' Joe: 'It ate a little bit greasy. It was almost like a pomegranate caramel and less of, like, a chip.' Tom: 'Overdressing the salad wasn't your best work.' In deliberation — Tom: 'An overdressed salad isn't as bad as a hammered piece of lamb.' Gail: 'I can sort of put Lawrence to the side a little bit because his salad wasn't, let's say, as offensive.'
