Broken Birthday Cake: Chinese Sponge Cake, Caramelized White Chocolate Cream, Nectarine
A toast to Laurence's wife.
While prepping: "We're going to make a little birthday cake for my wife. I missed both our anniversary and her birthday while I was here, so I have to make up for it. This is a really old school Chinese sponge cake. It's going to go well with a white chocolate mousse," which he finished as a caramelized white chocolate cream.
At service: "This is a toast to my wife. In my time on Top Chef I've missed both our wedding anniversary and her birthday. There's a broken birthday cake. You have fruit, old school Chinese sponge cake, and some caramelized white chocolate cream that is meant to be melting a bit because it's supposed to look kind of sad."
On the concept: "When you get everything together, you get this experience."
Final table: {Judge}: "I really love this caramelized white chocolate cream. The cake itself, I would have loved to see soaked in maybe some of that poaching liquid."
{Judge}: "He had the cake with the cream and the nectarine. That was a dessert for me, and the best."
