Caviar Arepa

Opening the green team's seafood flight, paired with rose. Instead of a classic blini Oscar built a small corn arepa, pressed with Parmesan salt, then crowned with caviar and chives. Oscar: "We started off with the rose. Instead of doing like a classic blini, I chose to do an arepa, little bit of Parm salt, and we paired caviar." The choice was designed to bring something personal and Latin-rooted to the plate rather than defaulting to European convention.
{Judge}: "The overall theme of [the green team] was kind of broad of just seafood. Everything was so different."
