Jonathan, Brandon’s twin brother, took on the chocolate chess pie his grandmother used to make and modernised it for the table. The plate set a chocolate sabayon alongside a chocolate custard, with crumbled pâte sucrée providing crunch and candied kumquats threading citrus through the chocolate.
{Jonathan}: "Truly my grandmother did make this for us, but she made the old school version. This is my version. We have a chocolate sabayon, and we have a chocolate custard. There’s a little bit of pâte sucrée that I’ve crumbled up, and then some candied kumquats." Time pressure meant he baked the pâte sucrée flat and crumbled it later, calling it his Top Chef pie dough.
{Judge}: "Jonathan had this great story, but what he made to me was chocolate pudding with whipped cream."
{Judge}: "Right. I think I was looking forward to having something with more substance."
{Judge}: "I did like the kumquat, though. I love orange and chocolate combination."
