Citrus Dreams Vol-au-Vents
Pastry case filled with orange and mandarin cream cheese enhanced with orange liqueur and spiced with hints of clove and cardamom. Syabira hoped the citrus cream cheese would be enough to maintain her strong run and potentially earn Star Baker for a third week running.
Paul Hollywood: 'I like the overall look of them. I think they look quite authentic and all pretty much the same size as well. Nice height. Looks like you trapped the butter inside it because you get the height without the lamination on the outside. The pastry is just about cooked through. Little doughy in the middle. Probably about two minutes away from being perfect. I think the favors are beautiful. I really do.' Prue Leith: 'This is a delicious volleyball. The custard inside is light and the pecan praline is just delicious. I think you've done a nice job with those volleyballs. Well done.'
