Laurence picked the coconut cake from the display because tres leches was the last meal he and his wife had shared before he left for the competition.
{Laurence}: "I’m gonna make a tres leches. It’s the last thing that I had with my wife before I left. I think I’m gonna turn this coconut cake into a tres leches. Make a coconut cream and condensed milk soak."
He topped the cake with a sugar dusting that was not ordinary granulated, but a sugar shot through with toasted coconut for an aromatic crunch. He held immunity from a prior challenge, and dedicated the dish to his wife. He finished in the top three.
{Judge}: "He actually made a nice cake. I want more coconut."
{Judge}: "Oh, I get it. It had that, like, young, sweet, coconut flavor, but I loved the texture, and it was a nice crumb."
{Judge}: "Yeah, it was nice to meet a cake."
{Judge}: "You got the moisture of the coconut cake. You really do."
{Judge}: "So far, my favorite has to be Laurence’s. His ability to blend those flavors effortlessly was fantastic."
