Shuai: "I'm making a johnny cake. Like a cornmeal pancake. Buttermilk topped with some scallion, some cheddar, some lap cheong in there."

Shuai: "I plan to put this grated cheese on one side of the pancake so when you flip it, you get this cheese layer. To make a pancake handheld, you want to create a vehicle similar to a sandwich or taco, where you pick it up, nothing falls down."

Shuai: " I did a cornmeal pancake, a little scallion, also a bit of lap cheong, a little cheddar on the bottom as well to give that little crisp. Topped with scrambled eggs and the sauce is chili crisp, avocado aioli."
