Vanilla and Raspberry Soufflé with Vanilla and Tonka Bean Custard, Whisky-Macerated Raspberries and Scottish Honey and Bee Pollen Granola. Inspired by the famous Scottish dessert cranachan (raspberries, whisky, oats), Jamie reimagined it in soufflé form. He intended a tonka bean ice cream but ran out of time and served a cold custard instead. Jamie: "My dessert is definitely a bit more of a twist. It's cranachan, but in a soufflé form. They haven't failed me yet. Operative words being yet." Jamie: "More is better when it comes to honey." Jamie (on serving): "Slightly uneven rise, you could say." Jamie: "Thanks for your incredible patience. It's a soufflé I've made for you today. A vanilla and raspberry soufflé with granola with some Scottish honey and bee pollen in it, raspberries macerated in whisky, and what was meant to be a vanilla and tonka bean ice cream is now a vanilla and tonka bean cold custard. Hope you enjoy."

Past Winner (Jane Devonshire): "I think that's one of the nicest things I've ever eaten in nine years of judging. You can taste the raspberries in the soufflé, and it's lovely. I will forgive him this not being an ice cream, because actually the custard works so deliciously in that pudding." Past Winner (Dr. Saliha Mahmood Ahmed): "I love the saltiness in the granola, and I think that really complements the soufflé really well." Past Winner (Thomas Frank): "With those beautifully whisky-kissed raspberries on the side, Jamie has knocked it out of the park." Grace Dent: "I love the taste. Lovely raspberry flavours. Is ice cream — well, it's custard." John Torode: "A very ambitious dish, but you can see that he ran out of time." Outcome: Named cook of the day; ADVANCED to the quarter-final.
