Tonka Beans

Tonka beans are wrinkly black seeds from a South American tree, prized for an extraordinary perfume that combines vanilla, almond, cinnamon, cherry and a hint of tobacco. They are typically grated finely with a microplane — a tiny amount (less than half a bean per litre of cream) is plenty, since the flavour is powerful and can quickly turn bitter or overpowering. Tonka shines in custards, ice cream, panna cotta, chocolate desserts and crème brûlée, and pairs especially well with stone fruit, vanilla and coffee. Note: tonka contains coumarin and is restricted in some countries (notably the United States) — check local regulations.
