Keith Corbin: So right here you have a hamachi that's been coated with curry powder, and then you have compressed pickled peppers, burnt leek charcoal, and coconut lime ginger foam. The foam deflated during service: That has fallen, yeah. It's just been sitting. Note: the transcript records the judges addressing this chef as Casey, which appears to be a transcription error for Keith.
Padma Lakshmi: Foam that has fallen. Did you mean for it to fall? Wiley Dufresne: Your foam didn't have quite that lift. But as a sauce — which is not what it's meant to be — it's delicious. Great job.
