Espuma

An espuma is a culinary foam made by charging a liquid base with gas using a cream siphon and N2O cartridges. Unlike a whisked foam, an espuma holds its airy structure for longer on the plate. The base liquid - here a strong coffee preparation - must have the right fat or lecithin content to stabilise the foam once dispensed. Consistency is the main challenge: too thin and the foam collapses immediately; too thick and it sits as a dense mass rather than a light cloud. A well-executed espuma dissolves instantly on the tongue, delivering flavour without weight.
