Dark Chocolate Salted Mousse with Clementine Curd Cream Horn
Dark Chocolate Salted Mousse with Clementine Curd Cream Horn

{Tom}: Working on multiple fillings notes: "My cream horns are inspired by puddings. One with the flavors of a trickle tart." Noel responds: "I'm glad you've done original flavors, though. I feel like everyone's laying it safe apart from you." Tom replies: "I could die on that hill." Noel adds: "What hill to die on? Maverick hill. I died on that hill many years ago." During assembly describes: "This is my dark chocolate and clementine." Observes other contestants: "They all just look absolutely gorgeous and I feel like mine are, like a little rough." His chocolate and clementine combination received mixed feedback on flavor pairing but pastry quality was noted as decent.

Paul: "Quite like the. Look at them." Prue: "They look really interesting." After tasting: "If you get both the fillings, it's absolutely delicious. The clementine brings a bit of acidity and cuts the chocolate." Paul: "I do like the fillings. I think the pastry, you haven't got a lot of lamination on that. You can see it's almost like a short crust. It's not flaking." Prue: "Yes. It's a bit cakey."
