Dim Sum Trio: Daikon Cake, Lobster Sticky Rice, Scallop and Shrimp Roll
A toast to dim sum and to four generations of family.
While prepping: "Growing up, dim sum was the gathering point for every generation. This dish is a toast to generations old and new. The last time I had dim sum was with my grandma, my mother, me and my son. Four generations at one table is a really beautiful thing." The components: "a lo bak go, which is a daikon cake, a scallop and shrimp tofu roll, and a lobster sticky rice," with a black garlic hoisin sauce. He flagged it as the riskiest course: "three different dishes in one dish. There's not much room for error."
At service: "We have a daikon cake with a black garlic hoisin sauce, a lobster sticky rice folded in XO sauce, and a scallop and shrimp roll with some fresh tofu skin."
{Guest}: "I was just blown away by the sauces." {Guest}: "There are all these little touches to elevate what your normal dim sum experience was."
Final table: {Judge}: "It was a lot of little things, tons of flavor. The sauce work really set the whole thing apart. The black garlic hoisin was fantastic."
{Guest}: "All three were really good representations of what those things are, but then you expanded on your vision of them."
{Judge}: "The lobster sticky rice was my personal favorite of the three."
