Duck Kimchi Soup with Red Banana

Kimchi Duck Soup with Duck Meatballs, Graffiti Eggplant, Daikon Noodles, and Red Banana

{Kenny Gilbert}: "When I looked at this randomizer, I immediately go to style of cook. Liquid and solid. From there, everything else are components to make that dish come alive. And so I immediately think kimchi soup."
{Kenny Gilbert}: "I am going to do some duck meatballs. I am going to do a breast. I am going to do daikon radish noodles through the sheeter."
{Kenny Gilbert}: "I love duck. There are a lot of things you can do with it. I start with the leg and thigh, then I go in the breast and carve it right out."
{Kenny Gilbert}: "I have to tackle this vegetable sheeter to make faux noodles out of sweet potato and daikon radish. Then I need to make my duck meatballs by grinding the duck legs, the liver, and the hearts. When it says whole duck, you use the whole duck."
{Kenny Gilbert}: "I wanted to get a crust on the outside of the meatball that will eventually break down without making it fall apart. A quick fry, then I am going to finish it off in the broth."
{Kenny Gilbert}: "I want to get a char on that graffiti eggplant. That adds a different layer of flavor into the soup. I also sliced it into circles, julienned it up, and immediately threw that into the soup. For bananas, I purposely selected a starchy red banana because I wanted to treat it like a potato element, diced up and in the soup."
{Kenny Gilbert}: "I bring my soup over. I pull out my meatballs with the eggplant and some of the kimchi. This is my first TOC experience. But I deserve to be here."
Voiceover: "Judges, I present to you kimchi soup with duck, graffiti eggplant, and red banana. The duck was butchered. The leg was run through the grinder with the livers and the hearts to create a meatball. Graffiti eggplant was grilled and diced. The vegetable sheeter was employed to craft mock noodles of sorts out of both daikon and sweet potato. In terms of liquid and solid, this is soup, and there are many solid components throughout."
Mei Lin: "I think making a soup was a really smart decision for this randomizer. My favorite part is the daikon noodles. I think it was left like that intentionally so we can tell that the piece of equipment was used."
Brooke Williamson: "There is a lot happening here and I find it a lot of fun. The attention that went into making a duck stock, using all of the duck parts to make these meatballs to add texture and flavor, and utilizing the entire duck, is so apparent."
Susan Feninger: "I think it is a smart dish. I think the eggplant is really nice in there. The choice of the banana was a challenging one. Maybe it could have been smashed and cooked a little bit longer so it got crispy, because it is starchy, but it is a little bit too starchy."
