Graffiti Eggplant

Graffiti eggplant, sometimes called Sicilian eggplant or striped eggplant, is a round variety with dramatic purple and white stripes. Compared to the common globe eggplant, it is notably less bitter and contains fewer seeds, making it more approachable for home cooks who find traditional eggplant too harsh. Its flesh is creamy and tender when cooked, absorbing surrounding flavors readily. This makes it particularly well suited to bold, spiced preparations like soups, stews, and grilled or charred dishes. For a smokier depth of flavor, char the skin directly over a flame or under a broiler before peeling or adding to a sauce. Graffiti eggplant also holds its shape well in stir-fries.
