Guest chef Nikita Pakathji demonstrated the benchmark dish for the skills test. She made crispy golden falafel from pre-soaked uncooked chickpeas blended with garlic, parsley, coriander, ground cumin and chili flakes, shaped into quenelles and deep-fried until golden. Served with muhammara - a roasted red pepper and walnut dip finished with pomegranate molasses, Aleppo pepper and lemon juice, retaining some texture from the nuts. A quick two-ingredient flatbread made from self-raising flour and Greek yogurt, topped with nigella seeds and cooked in a dry hot pan until blistered and puffed. Accompanied by a simple tomato salad with mixed-colour tomatoes, onion, fresh herbs and sumac. 

{Monica}: "Stunning. The falafel, crispy, crunchy. The inside is beautifully cooked. It hasn't dried out. It's held beautifully. You've got the herbs running through. It's so fresh. Your pepper sauce, it's so delicious. The hit of citrus to the sumac and the tomatoes. Your flatbread with the nigella seeds in it, I want more of this." 


{Matt}: "You made a very detailed flavoured dish look incredibly easy. If our contestants get close to this, I think all three of us will be impressed. That was great."
