Father Christmas' Baked Cheesecake

A festive baked cheesecake made with semolina and almonds, brandy, Christmas spices, tangerine and lemon. The mixture was made dense initially but lightened with folded egg whites. Unfortunately cracked during baking.
Paul Hollywood: 'I love the flavors that you go on there.' Mary Berry: 'I must say I really. I really like the filling. You've really got something quite unusual. Lovely brown pastry, pale golden underneath.' Paul: 'I think the overall appearance is a bit rough and ready. You know the patchwork quilt sort of where it's joined at the bottom and the sides. This is the same for a lot of your stuff. You're nearly there and then you lose it slightly.' Mary: 'I think Father Christmas would like it with a good dollop of cream.'
