Flight of Three Bao: Carrot Turmeric with Red Chili Pork; Chlorophyll Curry; Strawberry with Matcha 


{Laurence}: "I made a flight of three bao. So the yellow bao is carrot and turmeric. On the inside, you have red chili pork. The green bao is chlorophyll, and the inside is colored with turmeric, but also curry powder that I got from Madagascar. And then the sweet bao is dehydrated strawberries, and the inside is matcha." During prep: "The bao is a good move because it is a blank canvas. It's white naturally, but you can infuse a lot of different flavors and colors into it." "I made the doughs last night, and all those variables for dough is really scary. I was relieved when I saw it had yeasted up and it was live, but it wasn't over proofed." On tradition: "This is a take on char siu bao. So normally they have a little opening at the top, and my mom was like, you can't make them round because it wasn't traditional. But now she's the one that's always coming to my restaurant, taking these bao."

Emeril: "The bao were a lovely little flight of great, savory things leading into this final dessert bite. And it was really tasty." Tom: "Very impressive. I like the fillings. It's a good dish." Tom also: "He has definitely put the boldest step forward. He's boldly gone where no bao has gone before. You're coloring something that typically isn't colored and giving it something new and different. Fillings are great." Laurence won immunity for the next elimination challenge.
