She built a tempura-style batter and went hunting for bacon, then made a smarter pivot. {Duyen}: "I’m looking for bacon for my blt, but country ham is maybe even better because I don’t have to cook it." The finished open-faced sandwich layered fried green tomato, country ham, avocado and salmon roe. {Duyen}: "All right, chefs, in front of you, have a fried green tomato and country ham open faced sandwich. A little bit of salmon roe. There’s avocado." Her batter was passed to teammate Jen for oyster duty.
