A playful reimagining of a full English breakfast as high-skill pasta work. A large raviolo of hand-rolled squid ink-striped pasta encloses a filling of black pudding puree with a whole egg yolk at its centre, cooked precisely so the yolk remains intact and just set. Finished with crispy bacon, and served alongside a miniature sausage sandwich with a complex brown sauce of nearly twenty ingredients including plums, tamarind, Worcestershire sauce, dates and pomegranate. Inspired by Luke's time working in Scotland with chef Mark Donald.
{Judge}: The raviolo praised for beautiful execution - the earthiness of black pudding, the richness of the egg and the crispness of bacon all in perfect harmony. The striped pasta technique called clever, smart and very Luke. {Judge}: The sausage sandwich described as fun and delicious.
