Black Pudding
Black pudding is a cooked sausage made from pork blood, fat, oatmeal or barley and spices including pepper, mace and thyme, packed into a casing and poached until set. It has a deep, earthy, mineral flavour with a slightly crumbly texture. In its traditional form it is sliced and pan-fried as part of a full breakfast. In fine dining it is often pureed and passed to a smooth consistency, making it an effective sauce or filling with rich savoury depth. Its iron-heavy notes work well with egg yolk, apple and any pork-based preparation.
