Jhane's dessert, based on her grandmother's celebration cake: a ginger and rum cake with a plant-based coconut chantilly cream, a hibiscus gel and a mango (and passion fruit) compote.
Jhane: "My grandma makes a rum cake, so today I want to bring a little bit of that Jamaican flavour, that Caribbean sunshine into the kitchen." The coconut chantilly was a 'redemption arc' for a cream that hadn't worked earlier in the competition; on the day it didn't fully whip but still tasted delicious.
Anna Haugh: "I see that the cream, you didn't manage to get it whipped, but it does taste delicious... Your ginger and rum cake has a beautiful texture and a lovely ginger finish, a bit of spice at the end, really nicely balanced. Your mango is just bursting with flavour, lime zest and passion fruit. You really put feelings inside people through your food."
Grace Dent: "I love that your nanny's rum cake has so very much rum in it. It really takes me back to my childhood. It's buttery and light, sweet but not overly so, lovely to delve into this hibiscus gel. I really like this."
