An opera-style tort with almond and hazelnut sponge flavoured with green tea, filled with dark chocolate ganache and covered in green-tea buttercream. 


Ryan is a photographer who fuses British classics with his Asian heritage; his individually baked thin layers failed on the second batch and he ran out of time. 


{Ryan}: "This recipe I just whipped up this week, so it's all still experimental. It'd be nice to go into a bake 100 percent confident, but sometimes you have to take risks." 


{Ryan}: "I looked on the internet and found something impressive done by a Japanese pastry artist in Paris and thought I'd recreate that. I should have stuck with the tortes." 


{Ryan}: "The sponges didn't turn out right so I have to rework these now. This is the worst part. I'm not sure I'm going to make it, but I'm going to keep going." 


{Ryan}: "I don't have time to do another one. If it's dry, I'm going to booze it up and get Mary a bit sloshed. I hope she doesn't notice."

{Paul}: "I actually quite like the look of it. An opera is all about textures and flavours, but it's about textures." 


{Mary}: "You can see your layers very clearly. It looks very unusual, but the one flavour coming through very strongly is bitter chocolate." 


{Paul}: "A white chocolate body would have been better, to give you that sweetness to balance the bitterness coming from the top. Cuts well."
