Grilled Pork Loin with Carolina Ruby Bacon Jam, Sweet Potato Puree and Pickled Okra

At presentation: {Jonathan}: "So I have a grilled pork loin with Carolina Ruby bacon jam, sweet potato puree, pickled okra to cut through some of that richness." 


At judges' table: {Jonathan}: "I feel great."

WINNER of the Carolina Ruby round. Kristen Kish: "The winner of the Carolina Ruby round is Jonathan. Congratulations. It was close." Judge: "I just really like the treatment of the sweet potato. The sweet potato was the star of the dish. Everything else really enhanced it." At judges' table Tom Colicchio noted: "It was very close between Sherry and Jonathan." Jonathan was confirmed in the top five overall. Sean Brock added: "All five of you really took big, bold swings."
