Hazelnut Ginger Millionaires Shortbread

Hazelnut and crystallized ginger shortbread with salted caramel and chocolate orange topping. Made without using a thermometer, relying on visual cues for caramel consistency.
Paul: 'Do you like the design on top? I mean, you've got some lips there. I like to see that nice and fat. The caramel's bulging out on all of them, which make them equal. I love the shortbread. Very nutty. Gives it a nice edge. A nice little bit of crunch to the softness. The car was a little too salty.'
