A classic recipe test: meringue roulade with lemon curd and raspberry coulis. Cooks were given ingredients and a recipe but no timings, in 45 minutes. 


Kirsty had made meringue, raspberry coulis and lemon curd before, but never all at the same time. She made the call to roll her meringue the longer way, which the judges said would give her less of a swirl. Her meringue rose unevenly because she spread it slightly unevenly.

John: the meringue got a really good air into it; it's massive, but if she had rolled it from the other side she would have had a stronger swirl. 


Anna: the raspberry coulis is sweet and sharp, but the curd hasn't got enough sugar in it. 


Kirsty wins one of the two remaining aprons.
