Lamb & Sour Cherry Mochi

Closing course of the mochi flight, paired with merlot. Laurence: "I'm making a lamb and sour cherry. Yeah, I think that's gonna be really nice with the red wine." Ground lamb and sour cherry with fresh parsley made for a filling with the fruit-savory balance well-suited to the merlot's plum and dark berry character. Rhoda prepared all the mochi dough; Laurence wrapped and fried his own filling. Like the rest of the flight, the raw dough undermined an otherwise sound filling concept.
