Lamb Borek with Apricot Jam and Pickled Tomatillos.
Laurence drew on the California Pistachio gelato and connected it immediately to Turkish and Mediterranean cuisine - the backbone of his professional career despite his Chinese American background. He described his love of lamb and pistachio together and made a lamb borek: a Turkish-style layered pastry filled with seasoned minced lamb, served with apricot jam and pickled tomatillos. He observed that pairing a savory dish with a sweet gelato is unusual territory - more typically encountered with wine pairings than within a course - and that the 30-minute window made the challenge especially demanding. This was his second Quickfire win in as many episodes.
