{Toby}: Describes his flavor combination: "Lemon and thyme is like a classic, timeless combination. Timeless." Paul quips about the wordplay and Toby responds: "I'm not the guy to mess with that. I'm not Aaron." His flavor philosophy: "Things stand the test of time for a reason." During the challenge notes time pressure: "How many folds have I actually even done?" Works methodically: "Roll it, fold it back in the fridge." Observes butter issues: "Wow, that's a lot of butter coming out of those, isn't it?" Assembly challenges: "I just really need them to cool down a bit. Don't want hot horns and cold cream." Describes his filling: "Vanilla meringue on top." Acknowledges potential issues: "It does look a bit under baked since lagging off Paul's puff pastry recipe. And this one's not worked as well." Despite using Gordon Ramsay's recipe, his pastry didn't achieve the lamination he hoped for. The lemon flavor is praised but structural issues persist.

Paul: "Hello. I love the look of them fillings. I like the way they spill out. It's like the old fashioned creamed horn you used to get in the bakeries. Bit concerned about the color. Think it needed longer." Prue adds: "You can see the lamination, but you can also see where it hasn't baked enough." Paul notes: "It's got a little bit of rawness down at the bottom. Your lamination is there a little bit, but you've lost a lot of butter. But the flavor of the lemon is delicious with the meringue on top. Works beautifully."
