Lemon Strawberry Layer Cake
Adam's bright summer bake: a vertical layer cake of lemon sponge wrapped around strawberry whipped mascarpone, finished in pink strawberry buttercream and topped with caramel shards standing up around the rim. Adam is a public health advocate in Washington DC who plays in a bocce league, which he carefully clarified is not just 'an excuse to drink outside.' Decorating ran right to the wire.
Prue's first take: 'It's not really vertical. It's all over the place. It's quite interesting, though. It's a design aesthetic.' Flavor saved it partway: 'Flavor wise, it's great. The fruit comes through quite nicely. The sponge is delicious.' Paul liked the shards but found them 'slightly overkill.' The blow came on the texture: 'Your buttercream is a bit gritty. You can't have grit in your buttercream. You got to have that silky smooth.'
