Assigned the Mango India gelato flavor, Jassi drew on Indian culinary tradition to make malai paneer tikka - soft Indian cottage cheese marinated in cream, spiced, and charred - served with a kachumber salad of fresh cucumber, tomato, and curry leaf. The mango sorbet was repurposed as a chutney rather than a separate dessert accompaniment, tying the gelato pairing directly into the structure of the savory plate. 


Jassi told the judges: it is all about spices - just bring it on. They noted having never visited India but expressed full confidence working within the flavor profile.
