Paneer: Indian Cottage Cheese

Paneer is a fresh, non-melting Indian cheese made by curdling hot milk with lemon juice or vinegar, then pressing the resulting curds into a firm block. Unlike Western cheeses, paneer doesn't melt when heated - it holds its shape, making it perfect for curries, kebabs, koftas, and grilling. Its mild, milky flavour means it absorbs surrounding spices beautifully, becoming a flavour sponge in dishes like palak paneer or paneer tikka. Making paneer at home is straightforward and produces a softer, fresher result than supermarket blocks. Use whole milk, drain the curds in muslin, and press for at least 30 minutes for sliceable texture.
