Mango, Passion Fruit and Coconut Cheesecake with Mint Crumb
Mango, Passion Fruit and Coconut Cheesecake with Mint Crumb

Ismail's dessert was a no-bake cheesecake combining tropical flavours. Rather than infusing the cheesecake mix itself with passion fruit, he kept the cheesecake plain and topped it with fresh passion fruit, allowing it to taste clean and fresh. Fresh mango pieces were arranged around the outside, with freshly grated coconut on top and a mint crumb providing texture and colour. Raspberries completed the plate.

{Ismail}: "I have here mango, passion fruit, and fresh coconut cheesecake with mint crumb, raspberry, and fresh mango with fresh coconut grated on top."

{Marcus}: "We want a cheesecake that's got a wow factor. It needs to have a point of interest. Something that's going to set it apart from what we're all so familiar with."

{Tom Parker Bowles}: "The cheesecake is really nice. It's kind of fresh and zingy. I like the bits of mango."

{Jimi Famurewa}: "For me, it's just a little bit too sweet. The sweetness of the coconut, creamy cheesecake. The sweetness of the purée. I was kind of searching for more tartness."

{Tom Parker Bowles}: "The sweetness level was fine for me, actually. I'm very conscious of when puddings are too sweet. I think you can overdo it, but I think Ismail got it pretty right."

{Leyla Kazim}: "What I love about this is the generosity. This is someone who wants to feed you and make you happy."

{Marcus}: "It's fresh, it's light. He's not flavoured the cheesecake with the passion fruit. He's just put the passion fruit on top so it's so fresh. Mango around the outside. Love that crumb. It's crunchy, it's got texture, it's got fresh fruit. It's not what I was expecting, but it's absolutely delicious."

{Monica}: "Great flavours. He just needs to tidy up in areas."

Note: Critics were split on sweetness — Jimi felt it needed more tartness, while Tom found the sweetness well balanced.
