Ismail Hossain

There is a particular kind of chef who earns their place not through prestigious culinary academies or Michelin-starred apprenticeships, but through sheer grit, hunger, and an unwillingness to stop learning. Ismail Hossain is that chef.


Originally from Rajshahi, Bangladesh, Ismail now lives in West London with his wife Sarah and their daughter, working as Head Chef at The Stag in Hampstead. His journey through professional kitchens began at the very bottom—as a kitchen porter in Barrica Tapas Bar, a Spanish restaurant in London, where he learned discipline, speed, and respect for ingredients. Unable to afford culinary school, he worked for free with former colleagues to learn technique, eventually earning sponsorship for a Level 2 Advanced Cheffing course. From there, he worked his way up through every section, building and leading strong kitchen teams, developing seasonal menus, and consistently delivering food that people remember.


His cooking philosophy is straightforward: combine classical technique with the bold flavours of his Bangladeshi heritage, creating dishes rooted in personal memory and cultural pride. When he's not in the kitchen, he loves spending time with his family and travelling to explore local cuisine—experiences that continually feed back into his cooking.
