Matty's second batch featured mango, lime and coconut financiers decorated with mango puree and white chocolate coconut ganache, contrasting with his richer coffee flavor.
Paul Hollywood noted this version was better than the coffee one, with improved texture. Both judges agreed the flavors were excellent and grown-up, though they maintained the criticism about the thickness of the sponge versus the toppings.
