Financier Mold Selection

Traditional financiers are baked in small rectangular molds that resemble gold bars, hence the name. The shallow depth allows even baking in just 15-20 minutes. If using deeper molds, increase baking time and watch for doneness carefully. The batter should spring back when lightly touched. Using silicone molds makes removal easier, but metal conducts heat better for crispier edges. Butter and flour molds thoroughly, or use baking spray with flour for easy release.
